Correction. The ones given to us 12 years ago are Henckles. They worked for 12 years. Not a huge fan.

Which ones? Henckle has many “classes” of knives. I had an amazing set that if I remember correctly were German made, then told somebody about them for a wedding present idea, and we got Henckle “Statement” which are made in China and very noticeably lower quality.

What I usually suggest, is buy an inexpensive Smith's Arkansas stone from Walmart and start learning.
Mark your edge with a sharpie and work on your angle until you remove the entire sharpie from the edge cleanly.
Even numbers of strokes on each side to keep the edge centered.
Spend a few minutes each evening practicing while you watch TV.
Also look into buying or making a simple strop. Mine is some tanned leather a buddy gave me glued to a piece of 3/4" plywood. I have the cheap black and green honing compound on it.
It's a skill and once you develop it, if you need to touch up your edge on the fly you can. On the milder materials like your carbon steels and even S30V, you can touch the edge up on the edge of a car window and strop it on the back of your belt and be ready to go again if you need to.
I'm not the best out there. But I can put a usable edge back on my blades or axe if I need to. And like I said, I have the Lansky to fix anything I mess up or if the blade gets chipped.

Victorinox actually makes some pretty nice and reasonably affordable chef's knives. And for butcher knives, look into Old Hickory by OKC. They're a classic and for good reason.

I just watched a video on the 5-stone, and I see it includes a clamp and guides to keep the angle. I thought they were just stones where I had to do it all manually. Since it's guided I may go that route.

That's why I use it for repairs and such. I actually have the standard 5 stone and the diamond 4 stone set for some of the more exotic steels I've encountered.
Whoever had my CR2.5 had convexed the edge till it had so many angle changes I couldn't get it right by hand. 15min on my Lansky and it is a scalpel.

Got the challenge coin display stained and 1 coat of varnish drying.

So another forum I'm on has a knife pass around for one of the makers on the site. It was my turn with it and yesterday afforded me some time to play with it a little.
Just shy of 5" of edge, 5 3/8" to the scales and 10" over all length with a 3/16" spine and hollow grind make it an interesting sized knife.
The scales are beautiful. Just no arguing that. The finish on the blade is pretty rough. You can still feel the grinder marks in it. But it's a pass around, abuser knife to test the makers skill and it still looks awesome.
I batoned a little, chopped a little and made some feather sticks.
The size and balance of the knife made it very nice for batoning and feather sticks.
The handle is a little short and the lack of a good pommel swell made it a little hard to hang on to when chopping. It was doable, but I had to keep adjusting my grip, especially in the gloves I was wearing.
Overall, I like the knife a lot. I'm gonna carry it around for a bit and play with it some more before I pass it along to the next guy....

Although I'm not the Knife aficionado last weekend I lost my Buck Commander fold . I've been so happy with it that I went and ordered it's replacement on Mon. Then on Thur I found it under Quark's driver's seat [ yes I named the 2011 P4x after another DS9 character ] Anyway now I have twin's with the exception that the new one is slightly bigger .

found Put a couple days ago that my best friend where I currently live since we were deployed in Ukraine back in 2017 is getting posted away. Ended up ordering him a Keyshawn Blur with partially serrated blade and window punch. Along with a deep pocket titanium pocket clip today. Hope I can get everything in hand and put together ( longest part will be waiting for the MXG clip) before he leaves at the beginning of July

I got it years ago for work, opening boxes, cutting rope, cutting plastic, occasional screwdriver or pliers when the need arises and I'm too lazy to fetch the "real tool".
Even though I liked that it was very easy to deploy the blade I found it too bulky to carry daily in my front pocket and with the amount of use I gave it the clip started wearing the pocket of my jeans.
The sheath it came with slowed the one hand quick deploy blade I got the tool for. I stopped carrying it.
About a year ago I saw this:

with any kydex or molded sheath it will be knide/ multi tool specific. You can look up what model gerber you have then look ip for kydex sheath and should be able to find something that suites your needs
