It was amazing. Kosher salt and on a rack in the fridge overnight. Vacuum sealed and sous vide bath at 132° for about 9 hours. Ice water bath to drop the temp of the outer meat way down, then took it out of the bag to dry out on paper towels in the fridge. Convection oven preheated to 550° while I blended a room temp stick of butter with rosemary, thyme, garlic, salt, and pepper, then brushed it all over on a roasting rack. Then in the oven for about 10 minutes then switched to low broiler for another 5 minutes. Rested almost 10 minutes after that and it was perfection.
And we still have more than half of it left over.

Shot duck is good duck. We made the mistake once of buying a farmed duck from the local grocery store, was basically an overpriced greasy turkey. Was a major disappointment when we were hoping for real duck.
