I havent had NC BBQ. But what I DO know is, Texas is better than KC BBQ, and in my head reigns supreme.

I will have NC when i travel to NC, hopefully later this year.

Until then, Texas wins.

There's eastern and western. Eastern is the hard core vinegar and western NC Mountain BBQ which is a lot of mustard based. All good.

Get a chili and slaw burger from CookOut while you're there. Get the hushpuppies, seasoned fries and a blueberry cheesecake shake.

I'm a big fan of Texas "hill country" style BBQ. No sauces on the meat, just meat cooked exceptionally well.

This. 100% this. I grew up a stone's throw from the NC mountains. All my life I've had vinegar and mustard sauces which are still my favorites. But some of my cooking mentors were from Alabama and Louisiana and they both extolled the Texas Hill Country style cooking so I set out to learn what that was and man, am I glad I did! Slow cooked over oak smoke or a touch of mesquite with just SPG. BEST brisket, hands down. Gotta do some beef ribs soon. I've heard they are superior to pork. Gonna find out!

I've had some St Louis stuff, and it's good. I wouldn't turn down a plate. In fact, I typically eat the style of BBQ each place is famous for when I'm in that area just because you can bet it's gonna be done the best. And I'm rarely disappointed. But at home, my pork is all NC style with vinegar (even turned my wife's yankee taste buds on to it finally) and my beef is all Texas style. My ribs are "slightly overdone" competition style with some pull back and a light sauce glaze right before they come off the smoker.

Now I'm REALLY hungry and REALLY bored....

Me too. Vinegar sauce is 100% the best. Hands down but I dont see it much up here in north texas.


Authentic "Old Lady" vinegar sauce. I did a quart of it instead of a gallon. SO GOOD. Splash it on heavy as you pull the pork or mop with it if you're doing smaller cuts or "whole hog" style.

I stirred up some shiat with that post, eh? Ok, here goes.. bbq is the shiat. It's all good if cooked slow and low. Don't over sauce it.

I ran with some ole boys, about 10-15 +/-, from TX who ran circuit cook offs on 4-5 different teams running all over the country, mostly TX and OK cooking the regulars. Brisket, pork ribs, chicken and beans.

In my 12yrs of hanging out and gathering bean trophies I learned that my favorite and the judges favorite were the dry rubbed TX style, real bbq. I like all the sauces. Sauce everything if you want but sauce it after you taste the flavor of the chef's love of wood and fire and smoke and alcohol and friendship and lies and women!

Installed new brackets from Nissan, and a new set of 200# struts from McMaster Carr. These work okay and are noticeably better than the other 200# ones they sent last week, so there must be an issue with those. Although, the bracket is already slightly bent. I'll keep an eye on it now that I know roughly at one point it will give, but hopefully it won't move any more than this.

Almost sounds like you need to fab some superior brackets.

I thought that, but I think they're weaker than the hatch side by design. If the hatch one pulls out or breaks I need a whole new hatch because there's no way to get behind it. If these end up breaking the only solution will be to remove weight or downgrade to 175 and deal with the sag.

Old house trick: open your windows at night and let the house cool down. Then first thing in the morning, close all the windows. The house will stay cooler during the day. Your house is newer than mine and insulated so it should work even better.

This is what I do.... no A/C at all. Also have fans running to pull in the cool air and circulate it during the day., and pull the drapes/curtains shut. Ahhhhhh.

That works everywhere BUT Texas. Its like 94 here at night in the summer. Right now its okay, but we have like 90% humidity. So ugh

texas power grid is managed by ERCOT. These are their suggested thermostat settings to “preserve the grid” so we dont lose power in the summer like we did during SNOVID. They can go ufck themselves with these. Telling us to cut power, all the while pandering to big business, windmills and solar while still pushing electric cars. Its clear wind and solar are needed. But they arent doing it for Texas.
we need a couple big old school power plants. This is some shiat.
