We got our 1/4 beef yesterday. Wife has me fixing steaks tonight but the brisket will be coming up soon. Gonna find some pork butts and stuff to smoke at the same time.
I read up on it and general consensus is it’s just a bit of steel wool, if it’s plugged up it’s cause something metal came apart and the trans is doomed, I do have a wix, but would rather do oem

Those ribs have been brining since last weekend. Doing a pastramied pork rib. Was super good last summer when we first tried it

The downside of having a small smoker. Needed to switch temps and wood flavour so in finishing the pastrami off in the oven. Just needs about 20 mote degrees and it will be done

I think you mean, downsides of having a single smoker. Second smoker means you could run a different temperature and flavor at the same time...
