My GF and I do our version of "Overlanding" which usually involves taking as few major interstate highways as possible, sticking to the "red roads" as much as possible when we travel, and then hitting the backroads when we are out for fun. We take a camp-stove and 5 lb propane tank for cooking. We geocache along the way, man can you really find some off the beaten path sights when you're caching.
I try to find (or figure out) simple solutions (inexpensive) to the various needs that we have as we head out on road trips.
As time permits I'll be updating my build thread with a few more things that make our road trips so much easier for us.
