Congrats! My wife gets hers Saturday (therapist, works with geriatrics). Hopefully the rest of us aren't far behind.

My wife ordered from a place in Ottawa that has free deliveries in my area on orders over $100. So I just ordered 12 lbs of pork belly and some beef roasts to try and smoke some jerky
Any jerky i have made ends up being dog treats because they are to salty. I need to find a good recipe that I like.

There's something about the recipe I have to be careful with because of my blood pressure. I think it's the Prague salt (nitrates?) if I remember correctly.
I was looking into it and the kids went 100% virtual and my spare time during the week disappeared....

The Prague salt and the kosher salt would be what you need to look out for. In that recipe it’s only 1/2 a tsp for 3 lbs. I am sure you. An find a recipe with less but you will need to remember less salt the longer your curing time will be
