Going to be doing a round roast today for lunch meats. Should be tons of flavor between the smoker, and all this natural smoke from the mountains burning up. Anyone know what spices and such goes with a nice pine/evergreen mixture?

If eaten with in 5 day's it will have a acidic smokey taste.. I Age mine for 6 months to a year.. and make enough to alway's have a stock pile. As a treat..Yeah, like 30mins
