Well the ribs didn't last long. They were pretty darn tasty! Gonna wrap them next time. They were fall off the bone tender but just a little dry. I'll be doing the full 3-2-1 method next time.
I have not smoked any ribs yet because my smoker is to small to fit a rack of ribs on it.

Hope you guys are outside today, because it is damn near perfect!

I finally got around to using the paint pen in my most recent chips and scratches.

You could you have smoked some of them perch;)Alway's had a cousin that liked to smoke perch and he is really good at it. The best smoked fish I ever had was White Marlin at the Steamer in west ocean city , probably 27 year's ago or more but it still make's me drool thinking about it. Now I gotta change shirt again . I got into sampling all the different smoked fish dip's in the Key's about 7 year's ago. Yea, I gained weight that vacation !!

I'm not a big fan of smoked fish. The last time I had it was 17 years ago and it was smoked rainbow trout

The best fish for smoking are fish that have an oilier meat [ Bluefish/sea trout, lot's of diff off shore fish Wahoo/Mackerel ] You can also brine some of the good white meat fish to help take in/retain a little more of the smoke flavor.

afternoon. Currently 109 with winds at 37MPH. Definitely dusty out today.
I would imagine the wind's are a welcome thing to keep the temp down a little but the dust get's into thing's/place's it shouldn't be . Dose the sand in the wind help to block some of the sunlight also or is it just not worth it ?? stay hydrated

The wind does help keep the feeling of the heat down. But brings up a lot of eye injuries. And your right, the sand is so fine that it does get into everything.

That's the idea! The wife's planning on having one to grow salsa veggies. I get my habaneros, and I'm a happy camper!

We start laying the patio extension next weekend. 400 pavers going in.
Sweet! 400 pavers tho, my back hurts for ya. You oughta sink some serrano seed too. it's one of my fav pepps to cook with. It's got that great, non-bell pepper taste and has whole mouth heat vs back of throat or lips. Definitely a staple in this house.
