Brisket getting started!
I went over to a cousins house for dinner last wknd. He'd bought a pellet smoker about 6mo ago and wanted my TX bbq experience to tell him how he did..

I'm thinking I want a pellet smoker now. You don't have to burn a tree filling the regular smoker, it left a beautiful 1/8-1/4" smoke ring and was fawkin delicious.

Beef, it's what's for dinner.

I just can't bring myself to do that. I enjoy the process of running a smoker and the learning experience.

I'm trying a snake method on my kettle this morning. Mixed results. With just coal in the test run it ran beautiful, right at 200 for 7 hours with fuel to spare.

This run, the wood chunks are causing some swings but it's run since 4am without me doing much but trying to stall it for the last hour because it jumped to 300.

I'm still happy about the learning experience and I get to eat brisket!

Yes, tending the fire (drinking and smoking) for half the wknd is a pastime I miss although being single again and not partying since Covid, the pellet rig is looking really purty~

If I was going to run it every weekend, I'd be more interested in it probably but I'm a fan of "the old ways". I like the nostalgic feeling from doing things the way our grand parents would have.

I've honestly wanted to do a smoke with a wood tripod and some big tree branches as cover just for the experience. Would probably try that when I'm out camping and do a pork butt. I just think it would be entertaining to do.

I also want to spend more time cooking with my Dutch oven. I just haven't made the time for it yet. That's one of my goals for this fall if I can get a fire pit built but the wife and i differ on locations for them so it's not happened yet.

They tend to study us humans, and make us work for them.. Plus, Dam they are stealthy!. Claw marks to the ankle is common attacks!. They play with the food.. ( US )

I’ve got (they have me) two. Ralph, 8 now. And Winkie, 2.

Both street rescues as tiny kittens. Winkie was crying in a neighbor’s driveway the very day I was moving into a new place. I hollered up to her as she was on the porch that he was hungry. Her answer was he came from the apartments 2 blocks away and she didn’t want him. I whistled and called out kitty kitty and he came running.
The only damn food I had with me was a loaf of bread and that’s what he got. He scarfed down 2 slices like it was nothing.
I left him on the porch that night as I had to go back to the old place to finish up and get Ralph. Told the wee kid that if he was still there in the morning that Ralph would have a brother.
Oh boy, does he. Lol.

I kid you not, they are friggin angels from above.

Since everyone else is doing it...

Wilhelm von Schmittenheimer. Trained him in German because it is entertaining to yell at him that way. Is supposedly a cat, but seems to act more like a dog at times. Waits at the back door for me to come home from work (he knows the sound of the garage door), knows how to sit, shake, roll over, and stay (all in German). Also is potty trained, because I hate dealing with litter.DSC_0273.jpg

I'm not a pet person. I didn't want a dog, but we have one. Wife doesn't like cats at all so we thankfully we don't have a cat either.

I like animals, but having one just isn't for me. Having the kids is enough...

@TerryD , I was the same way. Super terrified to bring Ralph into my world when he came to me. I was a drunk and pretty much at the end of it all.... He saved my azz. I’ve been off the juice the whole 8 years since I took him in.

Winkie did almost the same thing. I was working so much that I felt bad for Ralph. The neighborhood I moved into turned out to be a drug infested shooting range. I was super stressed out. Winkie brought some much needed love back into my and Ralph’s world. He’s a sh1t, but man I love him.

I don’t have kids (OPK) thank Jebus. And never expected to share my life with a cat, let alone TWO.
Life is a funny thing........
